Restaurant Fryers – How To Keep Your Fryer Running Like New!

Patrons of fast food chains would agree that one of the most popular entree in these places is French fries. Who would not want to take a bite into that fries that are cooked with just the right crispness?

In case you are wondering how fast foods are able to make crispy French fries, you would be surprised that the key to making them is just simple: restaurant fryers.

Restaurant fryers are an essential item in any fast food chain. It consists of a wire basket, often rectangular, that are used to hold the food while it is fried deep in the oil.

The basket has a long handle which keeps it from getting totally submerged in the hot oil. The handle is used for lowering and raising the food to be cooked. The oil is placed in an open container, usually about a foot deep, where it is heated at a temperature high enough for frying foods.

Since these fryers require an investment for fast food chain owners, it is important that it is properly maintained to ensure longer service life. Fryers that are not cleaned regularly may accumulate old oil and food waste at the bottom. This would affect the way fried food tastes. In order to avoid this from happening, the following maintenance is required:

1. Before cleaning them, make sure it is turned off and unplugged. One can start cleaning the unit when the temperature in the thermometer lowers to approximately 150°F.

2. Deep fryer baskets are washed like an ordinary dish. They can be cleaned by scrubbing them a sink or putting them in a dishwasher.

3. The oil in restaurant fryers is drained via a spout found at the sides or bottom of the unit. Do make sure that a bucket or similar container is placed conveniently beneath the drain to collect the used oil.

4. The food particles that sunk in the bottom of restaurant fryers are removed by using a spatula. The latter is effective for scraping hardened food that sticks at the bottom of the unit.

5. After removing crumbs and fried food waste, the drain is closed to retain the water that will be poured in the fryer. Add some liquid detergent.

6. Turn the power of the fryer once more to heat the soapy water for about 10 minutes. The adhering oil in restaurant fryers will be removed by the detergent.

7. Repeat the first step, this time with soapy water being cooled down to the same temperature.

8. Again drain your restaurant fryers, fill it with water and vinegar solution. The mix for the solution is 90 percent and 10 percent respectively. Wash the fryers adequately with the solution to free it from soapy residues. Empty it through the drain.

9. Use a degreasing solvent to remove traces of oil on the outer surface of restaurant fryers. Afterwards, use a clean rag to wipe off and dry the unit.

10. Replace the plug on the drain before refilling it with fresh oil. Your restaurant fryers are now ready for use.
